< cite index="44-1">The Cognac Cask Matured is Kilchoman’s first release matured exclusively in ex-cognac casks. < cite index="42-1">Thirty-two casks were chosen by Anthony Wills and Robin Bignal for their quality, filled with Kilchoman spirit and left to age in the distillery’s warehouses for a minimum of six years, the casks themselves sourced from Tonellerie Bossuet in France. < cite index="41-1">This is a maturation rather than a finish — the heavily peated 50ppm new-make spent its full term in 300-litre French oak.

< cite index="48-1">The nose is herbaceous and fresh-fruited, with a delicate sweetness and peat smoke beneath. The palate brings toasted oak and sweet fresh fruit with hints of cinnamon and nutmeg, while the finish turns to crystallised ginger and citrus oil, lingering with a subtle touch of smoke. < cite index="41-1">Bottled at 50% with no colouring and no chill-filtration.
