Description
Twelve years fully matured — not merely finished — across three woods: American ex-bourbon barrels, Spanish Oloroso sherry butts and Spanish Malaga casks. The Malaga is the signature, and it is what gives Yellow Spot its stone-fruit sweetness.
Nose Mown hay and cracked black pepper, red bell pepper, nutmeg, clove oil and green tea, with sweet honey and peaches from the Malaga casks.
Palate Honeyed sweetness with pot still spice, fresh coffee, creamy milk chocolate and crème brûlée, over red apple and toasted oak.
Finish Sophisticated and complex, sweet throughout, closing on red grape and dry barley.
Revived after an original bottle turned up in Dublin’s Little Museum, and produced in smaller quantities than its green sibling.
