Description
The top of the Zacapa range. Rums aged between ten and twenty-five years are blended through the Sistema Solera, passing in sequence through four woods — ex-American whiskey, sherry, Pedro Ximénez and finally French oak that has held Cognac. That last stage is what sets the XO apart.
Nose Mature toasted oak, burnt caramel, dry roasted nuts, marzipan and orange peel in balance.
Palate Long, smooth and sweet — dark cherry, chocolate, date and prune, with oak spices of clove, vanilla and cinnamon.
Finish Lighter notes of dried mango, raspberry and ginger.
The solera ageing happens at roughly 2,300 metres in the Guatemalan highlands, at the facility the house calls the House Above the Clouds. Serve neat or on the rocks, with dark chocolate.
