Description
More than ten years of ageing, drawn from the best crus — Fins Bois and Petite Champagne — and blended in the traditional manner by the cellar master. Double distilled in Charentais copper pot stills, keeping only the heart of the run, and matured in Limousin oak in the limestone chais beside the Charente.
Nose Of great richness and elegant finesse, opening on a world of subtle aromas: wood, violet and jasmine.
Palate A soft, velvety attack, light at first then more pronounced, on vanilla and candied fruit.
Finish Very long, carried by a rare aromatic power, with rancio and honey.
That rancio — the nutty, faintly mushroomy note that only comes with long ageing — is the mark of a properly old cognac. Distillerie des Moisans is a family house at Sireuil in the Charente, running twelve traditional stills from October to March, with a stock reported at over 1,300 casks.
