The Kyoto Miyako Distillery is the first whisky distillery in Kyoto. It is located in Kyotamba-Cho, surrounded by beautiful nature. Two types of stills are used: one with an elongated swan neck and another shorter and rounded.
The rounder model produces a spirit with a relatively bold taste, while the bulging model produces a delightful and smooth-tasting spirit.
The use of different still shapes allows for a wide range of whisky flavors. Being surrounded by mountains like Mount Chorogatake, there is a significant temperature difference between day and night, which accelerates the whisky aging process, an essential step in its production.
