Description
Deutz has worked from Aÿ, in the heart of the Marne, since 1838, and built its reputation on elegance rather than power. Brut Classic is the house’s signature non-vintage cuvée: roughly a third each of Pinot Noir, Pinot Meunier and Chardonnay, drawn from 20 to 30 crus, over 80% of them Premier or Grand Cru.
Style Fermentation and malolactic in stainless steel, no oak. Reserve wines make up between a quarter and 40% of the blend. A minimum of three years on the lees, plus six months’ rest after disgorgement. Dosage 9 g/l.
Nose Hawthorn blossom and white flowers, then toast, marzipan and ripe apple and pear.
Palate The freshness of Chardonnay and the richness of Pinot Noir combine into a full-bodied elegance, silky in texture, closing on intense fruit.
At the table A versatile aperitif, and very good with canapés, smoked salmon, crab, sole meunière, turbot, poultry and white meats.
